MOM’S FAUXTATO SALAD
There are plenty of keto fake potato salads out there but this one is straight from the table at Coach Mike’s family BBQ’s! We roast the cauliflower here to dry it out when cooking, versus boiling or steaming.
INGREDIENTS:
16oz cauliflower florets
4 hard boiled eggs
2oz diced onion
2oz diced celery
1 TBSP brown mustard
2/3 cup avocado oil mayo
1 tsp salt
1 tsp black pepper
1 TBSP avocado oil
RECIPE STEPS:
Preheat oven to 400 F
Cut cauliflower into 1/2” chunks. Toss with oil, and salt & pepper.
Spread cauliflower on a parchment lined baking sheet. Do not pile up pieces.
Bake for 15-20 min until fork tender. Cool completely.
Dice hard boiled eggs and combine with cauliflower, onion, and celery.
Mix mayo & mustard and pour over the veggies. Toss well.
Taste and adjust seasoning with more salt & pepper.
If you want to be like my mom to make this pretty for a BBQ or party, add an additional egg or two sliced up and sprinkle with paprika!
Enjoy with a bunless burger, grilled sausages or chicken! Heck, or on its own.
