JICAMA LENGUA TACOS

These melt in your mouth tacos pack a lot of flavor… and quite a bit of spice too! Beef tongue may sound intimidating but honestly it is like the most tender roast beef you’ll ever have. There’s a tip of your tongue joke in here somewhere to make… lol!

INGREDIENTS:

  • 1 whole beef tongue

  • 1 can of chilies in adobo sauce (be mindful of ingredients here. Look for the cleanest one you can find)

  • 1 pack of jicama tortillas (look in your produce section or you can buy a whole jicama and slice into thin rounds)

  • 1 pack of cotija cheese

  • 1 cup beef broth

  • 1/2 tsp salt

RECIPE STEPS:

  1. Place beef tongue, chiles, salt and broth in a pressure cooker (InstantPot works!)

  2. Pressure cook on high pressure for 120 minutes

  3. After releasing pressure, take beef tongue out and peel the membrane off (the skin of the tongue.) It’s much easier to peel than you’re thinking, don’t worry!

  4. Shred the beef and put it back in the pot with juices and stir

  5. Place 3oz of beef tongue on two jicama wraps, top with 1/2 ounce of cheese and enjoy!
