Pork Belly Nuggets

Pork belly is a nice treat that packs a fatty punch! If you have never cooked with it before be ready for the massive amount of rendered fat you’ll collect during this recipe. Strain it through cheese cloth and keep it in your fridge for cooking. This a meat that it is truly best to track cooked so that you can avoid having to drink the rendered fat to hit the macros!

INGREDIENTS:

  • 2lbs Pork belly with the skin removed

  • 1 Tablespoon Salt (smoked salt if you have it!)

  • 1 Tablespoon Smoked paprika

  • 1/2 Tablespoon Cumin

  • 1 Tablespoon Chipotle powder (or 1 teaspoon cayenne)

RECIPE STEPS:

  1. Preheat oven to 400 degrees.

  2. Cut your pork belly into 1 inch cubes

  3. Combine all seasonings (save what’s left, this is great on chicken and pork!)

  4. Toss cubes with 2 to 3 teaspoons of the seasoning blend so that all are well coated.

  5. Spread cubes on a parchment lined rimmed baking sheet (the rim is essential, you will be rendering a lot of fat!)

  6. Place sheet in oven. Roast for 45 minutes, at 30 min flip the cubes and drain off all of the fat.

  7. Remove & serve! You can strain and save the rendered spicy fat for cooking!

NOTES: You can also do these in an air fryer! Cook at 400 degrees for 20-25 min tossing frequently.
