Fatty Eggs

On his culinary adventures, Coach Jon discovered that each scrambled egg will hold up to a tablespoon of butter when you’re cooking! These eggs are fluffy and delicious, and not at all greasy!  They can be a great quick meal alone or seen as a blank canvas you can turn into a work of macro friendly art!

INGREDIENTS:

  • Three large eggs

  • Three tablespoons butter (or any fat of choice, like bacon grease, tallow, duck fat, avocado oil, etc.)

  • Fresh ground black pepper and salt to taste

RECIPE STEPS:

  1. Beat eggs and put aside. 

  2. Heat pan over medium low heat and add butter to melt. 

  3. When the butter’s white foam subsides, add eggs and stir slowly but constantly.

  4. Just before the eggs are fully cooked stir in any desired seasoning (like salt and pepper)  and remove from the pan.  

  5. Enjoy! OR… Go wild making this a full on scramble. See the list below for some ideas!

NOTES: Eggs alone can be a great meal or side dish, but you can also easily add to them at step 3 to make a hearty scramble. My favorites include:

  • Shredded cheese

  • Cooked bacon

  • Leftover meats from another meal (chuck roast, brisket, steak, grilled chicken, sausages and more!)

  • Roasted vegetables like broccoli, cauliflower, asparagus or brussel sprouts

  • Sautéed vegetables like mushrooms, peppers, onions

  • Fresh baby spinach or arugula

  • Soft cheese like cream cheese. Brie, or mascarpone (best folded in when the eggs are almost cooked

  • Pico de Gallo or salsa

  • Green onion and chives make a great topper as well!
