Crazy Tender Bison Meatloaf

AKA (Aka The Bison Bacon Butter Bomb!)

This recipe was inspired by an Instagram friend’s take on a carnivore meatloaf where she used moistened pork rind crumbs to add tenderness. (Check out Lori’s profile here!) This idea immediately had me thinking, could this lead to my long sought after holy grail of a truly tender keto and carnivore meatloaf??? I had to try with what I had handy and it turned out great. I’ll leave some notes with suggestions for substitutions at the bottom!

Servings: 4 (Or less if you’re that wild!)

INGREDIENTS:

20oz Ground Buffalo/Bison

1 Cup Pork King Good Pork Rind Italian Crumbs

0.5 Cup Beef Bone Broth (I love Lonolife!)

2 Large Eggs

6 Slices Sugar Free Bacon

3 Tablespoons Butter

1 tsp Ranch Seasoning (I used FlavorGod)

Ground Pepper to taste

INSTRUCTIONS:

  1. Make the butter filling! I let the butter soften to room temperature than blend well with the Ranch Seasoning, Separate on plastic wrap into two small flat discs and freeze.

  2. Warm the bone broth and add to the pork rind crumbs in a bowl and stir well. Let this sit a few minutes then stir again too ensure the broth is fully incorporated. Allow to cool to room temperature if your broth was hot!

  3. Beat the eggs and combine with the pork rind mixture. Incorporate them together well.

  4. Place the bison in a bowl and season well with ground pepper. I do not add salt here as the pork rinds and other ingredients bring a fair amount of salt along. Add the pork rind mixture and blend thoroughly.

  5. Seriously, blend it well. I am not kidding. Is it meatloaf if you don’t get your hands in there?

  6. Separate into two and flatten each into an oval of about 1/2” thick. Place a frozen butter disc into the center of each and form into loaves. Again, I am not kidding. Leave no cracks, seal that butter in. Some warm water on your fingers can help create a seal.

  7. Wrap each loaf in 3 strips of bacon.

  8. Place on a baking sheet lined with parchment or a silicone pad then into a 350 degree preheated oven it goes!

  9. Cook for 40 minutes then increase the heat to 425 degrees and cook for an additional 10 min to brown the bacon well. You can also toss it under your broiler if it fits!

  10. Allow the baked loaves to cool for 10 minutes and then slice open and watch the butter fly!

NOTES:

You can alter the seasonings of everything to your liking here! I added a chipotle seasoning to the beef. If you are not strict carnivore you can add actual garlic to the butter, minced onion to the meat loaves, and even some sugar free ketchup on top! I also think this would still be crazy tender without the butter center of you want to skip it!
