Cinnamon “Rice” Pudding

Konjac root/Shiritaki rice (or noodles) can be a great way to add some volume to a dish and this recipe creates a perfect treat that can fit into your macros! This rich creamy pudding is two ample servings or one VERY AMPLE serving if you’re in the mood. And it requires no cooking! INGREDIENTS:

  • One bag Miracle Noodle Rice (8oz) or your preferred brand

  • 10 Tbsp Canned Coconut Cream (see instructions for prep)

  • One scoop (17g) vanilla collagen powder (I use Preferred Keto)

  • 5-6 drops Liquid stevia or mink fruit

  • 1/2 tsp cinnamon

RECIPE STEPS:

  1. This first step is KEY! Drain the rice and rinse under cold water in a mesh strainer for several minutes. This removes any off smell. After rinsing allow to drain for a few minutes.

  2. You can buy coconut cream in a can or buy canned coconut milk and place it in the fridge over night. Drain off the liquid and use on the thick white solids.

  3. Combine all ingredients except the rice in a bowl, mixing well.

  4. Fold in the rice until fully combined. The rice does not need to be cooked.

  5. Mixture will appear looser than expected right now.

  6. Place in refrigerator overnight to allow it to set up well.

  7. Serve with a sprinkle of extra cinnamon on top. If you want to add even more fat to the dish, whip up some heavy cream with a few drops of stevia, and use as a topping.

NOTES: You can basically use any collagen or protein powders to change up the flavors, etc. A favorite of ours is using Giant Sports Keto Cheesecake Shake Powder in the pudding for a truly decadent treat that is slightly higher in carbs.
