BUFFALO CHICKEN “RICE”
Take “buffalo wings” to the next level with this easy dish, that makes a great meal prep! The addition of the sauce after the dish is cooked bumps up the “buffalo” feel and flavor to me because you’re not cooking it down or breaking the butter.
Ingredients :
16oz chicken breast
2oz onion, diced
8oz frozen cauliflower rice
1 TBSP avocado oil
3oz blue cheese crumbles
2oz hot sauce (I use Tapatio!)
4 TBSP butter
1/2 tsp Salt
1/4 tsp Pepper
1/2 tsp garlic powder
Recipe Steps:
Cut chicken into 1/2in cubes & season with salt, pepper & garlic.
Heat skillet over medium high heat, at oil & onion and sauté until translucent.
Add chicken to skillet and brown.
Add cauliflower rice, stir to combine, lower heat to medium low and cover for 5 minutes
In the mean time, melt butter and whisk together with hot sauce.
Remove cover from skillet, and raise heat to medium. Cool until any residual water has evaporated.
Remove from heat and add butter/hot sauce mixture. Stir to combine.
Plate portions and add 1oz blue cheese on top.
