KETOCHOW COFFEE CAKE

Coach Jon has done it again! He was inspired by KetoChow's Pecan Sticky Bun to make a coffee cake with a swirl filling. This is definitely a treat to savor, and yes, the higher total carbs makes it a special occasion food indeed! Need to grab some KetoChow to bake up your own loaf? Ingredients:

Dry ingredients:

  • 1 cup almond flour

  • 3/4 cup coconut flour

  • 1 packet Pecan Sticky Bun Keto Chow

  • 3/4 cup allulose

  • 2 tsp baking powder

Wet ingredients:

  • 1/2 cup water

  • 2 eggs

Yeast starter:

  • 1 tsp yeast

  • 1/4 cup warm water

Filling:

  • 6 TBS butter

  • 1/4 cup allulose

  • 1 Tbsp cinnamon

  • 1 packet Pecan sticky bun Keto chow

Instructions:

The Dough:

  1. Add yeast and warm water to a bowl, and set aside.

  2. Add dry ingredients to a bowl and mix well

  3. Add wet ingredients and yeast mixture to a bowl and mix

  4. Add wet and dry ingredients together

  5. Let dough rest 10 minutes and preheat oven to 355 degrees Fahrenheit

The Filling:

  1. Melt butter and place in a bowl.

  2. In another bowl, mix allulose, cinnamon and KetoChow. Set aside

Combining the Loaf aka Magic Time!:

  1. Take rested dough and place between two pieces of parchment. Spread evenly into a rectangle approximately 12”x18”.

  2. Spread the melted butter evenly over the dough and then sprinkle the allulose/KC mixture over the dough

  3. Roll the dough up into a cylinder and place on a baking sheet prepared with parchment paper

  4. Bake at 355 for 30 mins or until golden brown

  5. Let rest for 10 minutes, slice and serve.
