KETOCHOW COFFEE CAKE
Coach Jon has done it again! He was inspired by KetoChow's Pecan Sticky Bun to make a coffee cake with a swirl filling. This is definitely a treat to savor, and yes, the higher total carbs makes it a special occasion food indeed! Need to grab some KetoChow to bake up your own loaf? Ingredients:
Dry ingredients:
1 cup almond flour
3/4 cup coconut flour
1 packet Pecan Sticky Bun Keto Chow
3/4 cup allulose
2 tsp baking powder
Wet ingredients:
1/2 cup water
2 eggs
Yeast starter:
1 tsp yeast
1/4 cup warm water
Filling:
6 TBS butter
1/4 cup allulose
1 Tbsp cinnamon
1 packet Pecan sticky bun Keto chow
Instructions:
The Dough:
Add yeast and warm water to a bowl, and set aside.
Add dry ingredients to a bowl and mix well
Add wet ingredients and yeast mixture to a bowl and mix
Add wet and dry ingredients together
Let dough rest 10 minutes and preheat oven to 355 degrees Fahrenheit
The Filling:
Melt butter and place in a bowl.
In another bowl, mix allulose, cinnamon and KetoChow. Set aside
Combining the Loaf aka Magic Time!:
Take rested dough and place between two pieces of parchment. Spread evenly into a rectangle approximately 12”x18”.
Spread the melted butter evenly over the dough and then sprinkle the allulose/KC mixture over the dough
Roll the dough up into a cylinder and place on a baking sheet prepared with parchment paper
Bake at 355 for 30 mins or until golden brown
Let rest for 10 minutes, slice and serve.
