RADISH BREAKFAST CASSEROLE

If you’re just used to having radishes raw and sliced thin on a salad this one will be a whole new world. The nostalgia of potatoes ’n eggs without all the carbs!

INGREDIENTS:

  • 8 large eggs

  • 3 slices of bacon

  • 4 oz shredded cheese (feel free to shred it yourself to avoid anti caking agents)

  • 1/2 cup half n half

  • 2oz onion

  • 8oz thinly sliced radish

  • 1/2 tsp salt

  • 1/2 tsp pepper

RECIPE STEPS:

  1. Pre heat the oven to 350’F

  2. Cook bacon on medium heat until crispy

  3. Remove bacon and add onions to the pan with the rendered bacon fat

  4. Cook onions until they start to brown, remove them from the pan

  5. Add eggs, half n half, 2oz of cheese and the bacon to a bowl and mix well.

  6. Add sliced radishes to the bottom of an 8 x 8 pan. Then add cooked onions of the top and spread out.

  7. Add egg mixture on top of the radishes and onion

  8. Cover with remaining cheese and bake at 350’F for 40 mins

  9. Serve and enjoy!
